I have tried repeatedly to change the date color (text) to ANYTHING other than black, but when I publish it and select the mini-calendar view, it ALWAYS makes the date color (text) BLACK!!! Please help. My website background is black so this is obviously not gonna work. I choose to have a transparent calendar background so I can use the black grainy background of my web page. PLEASE HELP! Thx!

It seems you are publishing the mini-calendar view? I am not sure I follow the relation between the date text color and the background color. If you can share a sample link to your calendar on a published page, it will be much easier for me to provide you with a helpful answer.
