Our church stops most repeating events over the summer. Can a repeating event have a stop date or do I have to wait until we are in a month that has no meetings and then remove it as an event?

Yes; under the "This event repeats" section, there is a field for "Repeat until". After that date passes, no new instances of the event will appear on your calendar.
