I wish we could set the default duration to be something other than 1 hour. Well, really, I just want the default duration to be 0 hours 0 minutes, but it seems like being able to choose the default duration would have more utility for more people.

I wish we could set the default color for events.

You can set the default color for events if you create a custom category for them.
You can also set default durations for your custom categories if you have a Scheduling subscription (even if you aren't using the other scheduling features)
